We've all had bbqs, but what got us into Low n Slow bbq? Mitch has always owned a variety of bbqs, ranging from simple gas bbqs, open fire grills, butane cylinder stoves, webers, charcoal cookers and now offset smokers. Mitch and Mel have always bbq'd, and they say it brings together family and friends.
There is something about sitting around a camp fire that draws you in, the slow crackling sound, and warmth is hypnotic and get's into your soul. It's what Mitch and Mel have always done. They have always cooked with an open flame of some description. Low n Slow came about by accident really, whilst Youtubing a video on reverse searing a big thick steak. An ad popped up about some southern American bbq competition with the likes of Moe Carson, Myron Mixon and Tuffy Stone. From there Mitch was hooked and had to try it.
A cheap offset smoker was purchased and many undercooked and tough briskets later, something clicked. Mitch nailed his first brisket. Juicy, barky, soft and tender, he flung a beautiful slice of brisket over his finger and said 'I think I got it'. A bigger better offset was immediately bought and he started to showcase his cooking skills to friends and family.
From there they were asked to cook for a friends party with 25 guests, then another, and another, then a 60th Birthday for 160, then a triple engagement for 240 people. They decided that Mitchs hobby had turned into something bigger, and they needed a name. Smokin M Bbq was thrown around for a while before officially designing a logo in 2021. Private parties soon turned into catering public events, weddings and other occasions.
Originally Smokin' Em Bbq (Mitch really wanted to get into the competition scene and chose this comp name but this never happened and they went down the catering route.
It was shortened to Smokin M BBQ to represent Mitch and Mel McCabe (all the M's)
